April Long Weekend - Day 3
For most people, today is the last day of this Easter weekend. But for the little people, school is still out for one more day.
The plans for today included the dentist, Dai Dai's passport photo and visiting Jenny (my best friend from high school). We know that the girls never liked waiting around when we got our teeth cleaned, we decided to drop them off at mom's.
We spent almost 3 hours at the dentist because we had our appointments one after the other. Normally, we have our teeth cleaned at the same time but because we could not leave Dai Dai alone, we went in one at a time. After the dentist appointment, we took Dai Dai to the photo shop for his passport photo. However, when the lady told us the cost for a baby passport photo was 15 dollars, we both gasped. Without thinking, we said no thanks. And walked out. So much for that. I think Blacks charges 12.99 for the infant pictures. We'll just go there.
We arrived at Jenny's house after 4 pm. Kaylee was probably looking out her window wondering why were so late because as soon as we got out of our car, there front door opened and I could hear the "hi CC...hi Amanda!" screams.
While the kids played, we enjoyed a nice afternoon of chit chat and catching up. We keep bringing up the family vacation topic and that we need to organize a trip to go together. Nothing has ever materialized despite this topic has been brought up for the last 3 years. hmmm...we do need to do something about that!
For dinner, Jenny made us authentic vietnamese bun (vermicelli noodle soup) and a cheung fun dish. She really went all out. The broth for the noodle soup was prepared since yesterday -- broth was made with spare ribs, tomato (less the seeds), onion and a hint of tamarind in the end. The ingredients are simple but the preparation took two days so, it was so flavourful and no fat. We were most impressed with the cheung fun...because Jenny can make her own cheung fun rice layer. They were paper thin and so soft. She stuffed them with minced pork and wood ears fined chopped. She also prepared a dipping sauce of fish sauce, vinegar, water and garlic. Absolutely yummy. And yes, we would never find this at Pho 88!
