Summer Rolls

Vietnamese Summer Rolls

I learned how to make summer rolls. They were not difficult to make but just a little tedious in getting the filling prepared. A lot of chopping or "julienne" cutting of vegetables. Stephanie did the hardest part of shelling and de-veining the shrimp. After all the ingredients were done, it was time to soak the rice paper and start rolling.

Of course, we could not forget the yummy peanut sauce for dipping -- made with peanut butter, light soy, sesame seed oil, siracha, honey, a bit of water to make the sauce less thick...and a touch of vinegar -- well, it called for rice vinegar, but since I did not have that in our pantry...the regular vinegar still added the acidity it needed.
